This plum is quite popular here
and almost any fruit ends up in a pie at some point or other. I made this last year and was really
surprised at how nice it was. I'd never made any kind of dessert with plums
before. I haven't given the recipe for
the sweet pie crust because it's too difficult with the differences in flour
and butter around the world so I'll let you use your favourite recipe for that. Bon Appetit!
250g sweet pate brisée
(pie crust dough)
100g powdered almonds
800g damson plums, washed and
dried
200g sugar(caster in the UK)
Pinch of cinnamon
Lightly sweetened whipped cream
Preheat oven to 210C or 415F.
Roll out pate brisée and place in
pie plate or I use a flan pan with removable bottom. Prick bottom with fork. Mix powdered almonds
with about 50g of the sugar and sprinkle across the bottom, this will help to
absorb the juice from the plums. Slice the plums from top to bottom and remove
pit. Arrange nicely and quite tight around your crust. Sprinkle with about 75g
of the sugar. Bake for 30 to 35 minutes
until crust is lightly browned and plums are caramalized. Cool. Just before
serving sprinkle with rest of sugar and cinnamon. Serve with whipped cream.
